A Perfect Menu for an Unpredictable Winter

Yesterday the late January sun shined over Charleston and tomorrow we can expect sleet, snow and ice. When developing his late winter/early spring menu, Executive Chef Marc Collins created dishes to counteract the effect Charleston’s unpredictable weather has on its dinner-goers.

Chef Collins explains, “the best part about this time of year is we’re still in the throes of winter but spring is very close.” Circa 1886 Restaurant’s new menu offers dinner options for bitterly cold and balmy nights alike. For chillier evenings, Chef Collins suggests his favorite cold weather comfort food, lamb. His new featured lamb entrée is a Cardamom Braised Lamb Shank with Celery Root and Flageolet Mousseline, Granny Smith Apple Compote, Smoked Paprika and Roasted Squash. Chef’s suggestion for a lighter option on a warm evening – a sushi-inspired Sake Brined Salmon with Carolina Gold Sushi Rice, Honeydew, Pickled Ginger Gel, Thai Pepper Coulis, Shitake Mushrooms and the restaurant’s house made ‘seaweed’ salad – better known as “C” Weed Salad.

Circa 1886’s new menu offers five appetizers, ten entrees and seven sweet finishes. A handful of these offerings were carried over from January’s Restaurant Week menu by popular demand. Diners fell in love with items like the Gas House Egg, an elevated ‘eggs in a basket’, Pumpkin Seed Granola Encrusted Pork Tenderloin with a Sour Yuzu Glaze and Corn Beef Sweet Potato Chipotle Hash, and Pastry Chef Scott Lovorn’s Caramel Banana Cake, now accompanied by homemade Butter Pecan Ice Cream, Pecan Toffee and Passion Colada Espuma (pictured below).
